6 c. whole wheat flour mixed with 1/2 c. wheat germ
Combine yeast and milk. Let stand 10 min. Add next 3. Add enough flour to make a workable dough. Knead on a floured board until elastic. Turn in an oiled bowl. Let double. Punch down. Roll out on cornmeal-covered board to about 1/3" thick. Cut into 3" rounds. Let rise 30 min. Sprinkle griddle or heavy pan with cornmeal. Heat to 350-375F. Grill 15 min. on each side.
