1 cup each couscous, chopped parsley, and chopped chives
1/2 cucumber, cut into pieces
1/4 cup crumbled cheese
Heat grill. Grate zest of 1 lemon into a bowl, squeeze in juice. Add garlic, oil, salt and pepper, mix well. Slice pork, add to bowl along with green onions, toss. Place couscous in a bowl, grate zest of remaining lemon over top, mix well. Add 1 1/4 cups boiling water, let sit until all water is absorbed. *Thread pork and green onions onto skewers, grill until cooked through. Squeeze juice of lemon over top, transfer to plates. Fluff couscous, toss with chives, parsley, cucumber, and cheese. SERVE with pork skewers & ENJOY...
