Mega Chocolate Dream Cake Cake: 13 ounces flour 2-1/2 ounces cocoa powder 18 ounces sugar 5 eggs 11 ounces butter 11 ounces dark chocolate 7 ounces hot water 1 teaspoon instant coffee granules 1/2 teaspoon baking soda 2-1/2 teaspoons baking powder 1 teaspoon salt 2-1/2 tablespoons oil 5-1/2 ounces milk Ganache: 5-1/2 ounces dark chocolate 3-1/2 ounces heavy cream 1 tablespoon butter For cake, break up chocolate into a saucepan. Add butter and sugar. Dissolve coffee in hot water and pour into chocolate mixture. Heat over simmering water, stirring constantly, until sugar completely dissolves and butter and chocolate are completely melted. Remove from heat, stir and add milk. Add eggs one at a time, beating well after each. Stir in oil. Combine flour, cocoa, baking powder, baking soda and salt. Sift dry ingredients into batter and stir to combine. Line a rectangular baking pan with high sides with parchment. Butter parchment. Pour batter into pan. Bake at 325 degrees for 1-1/2 to 2 hours. Remove from pan and let cool. Wrap in plastic and refrigerate for at least a couple of hours or overnight. For ganache, combine cream, chocolate and butter. Melt in a double boiler. Drizzle over cake.
